    Drawing inspiration from the joy of summer grilling, this dish takes the art of cooking meat to new heights. Slowly brought to a temperature of 52 degrees at its core, it is then swiftly seared on a scorching hot plate, creating a sensational harmony of flavors and textures.

    In homage to our cherished homeland, Emilia, this dish finds its roots in the heart of its mountains. Here, amidst the majestic scenery, we carefully handpicked the finest ingredients to craft our delectable trout masterpiece.

  • Octopus and turbot in raw beer

    This dish exudes a robust and jazzy symphony of flavors, resonating with a medley of medium frequencies and a steady rhythm. The octopus takes center stage, cooked in raw beer, and its essence is transformed into a velvety purple mayonnaise, adding a delicate touch to the composition.
