A dish inspired by the pleasure of the summer grill. The meat is slowly brought to a temperature of 52 degrees to the heart then quickly blanched on the hot plate.
Smoky trout from the Apennines

A dish inspired by our homeland: Emilia. And right in its mountains we have selected all the ingredients to make our trout.
Octopus and turbot in raw beer

A strong and Jazzy sound characterizes this dish, full of medium frequencies and a sustained rhythm. The octopus is cooked in raw beer, and with its water we make a delicate purple mayonnaise.
